Hi. I’m Grace Delcano, the owner/pitmistress/dishwasher of the Galewood Cookshack. I grew up on the north side of Chicago, and didn’t know what real barbecue (not parboiled, not baked, not grilled) was until I went to Memphis in the mid-90’s. I couldn’t find anything like it in Chicago, so I decided to learn how to barbecue. That was about a thousand pounds of smoked pork products and one fireball-induced ER visit ago.

Being a vintage motorcycle and scooter dork, I’ve spent a lot of time wandering swap meets and rallies in the middle of muddy fields. After eating one too many sausages of questionable origin cooked by a guy of questionable hygiene, I thought, “Hey, maybe I could sell some barbecue at these things”. That’s how this all started. My barbecue philosophy keeps it simple. It’s not really about secret spice rubs and sauces, just traditional cooking methods, low and slow over hardwood. If you have 14 spare hours some day, I’ll teach you how to do it yourself. Or you can just buy a sandwich from me instead.
